REMEMBERING DANNY

On January 31, 2012 Tröegs Brewery lost a family member.

Danny Glover didn’t work for Tröegs very long, but his death nine days after a car accident on an icy stretch of the Pennsylvania Turnpike shook the brewery to the core. Our brewery family is relatively young and to think that a 24 year-old guy who leaves in a car one morning (ironically to attend a funeral) could be gone a week later is unbelievable.

We first met Danny at Andy’s Corner Bar in New Jersey when he showed up for a Tröegs event. One of the last things Danny said to us that night was, “The next time you see me, I’ll be working at the brewery.” He had a job a Tröegs just a few months later.

Even if Danny’s arrival time for work was less than predictable and his uncanny ability to forget everything about his job overnight drove us nuts, he was a hard worker who would do any job with enthusiasm. But more importantly Danny had an infectious smile, a heart of gold and the absolute ability to spread joy through a room – it was hard not to love the guy.

That love was magnified 100 fold when more than 400 people showed up at Danny’s funeral. After shedding a lot of tears and sharing a few beers with his family and wide circle of friends, it was apparent that our brewery family was only one group of people lucky enough to know Danny.

If a tragedy like Danny’s death could have a silver lining, it happened when Danny’s parents agreed to donate his organs to the Gift of Life organ donation program. At least five people benefitted from Danny’s donation, including his Little League baseball coach who received Danny’s liver.

The Tröegs family knew we had to honor Danny and the only thing that made sense was to brew him a beer.

Dubbed “Danny’s IPA” and released as part of the Scratch Series, this black India Pale Ale is modeled after Danny’s favorite beer, Nugget Nectar. We’ve modified the grain bill and played with the hops – keeping in mind that Danny loved hops more than anything else.

In honor of our friend Danny Glover, Tröegs Brewery will donate $10 from every case of Danny’s IPA sold out of the brewery in Hershey to the Gift of Life Organ Donation program. Danny’s IPA will be available at Tröegs Brewery starting Friday, April 27 starting at 11 a.m.

If you cannot join us at that brewery, raise a glass in Danny’s honor on Friday night.

Scratch System Brewing by Bruce Tanner

Filed under: Scratch Beer,Troegs NewsMathew @ 4:05 pm

As far as the scratch system goes, I’ve only used it once, for the porter. For me, it was a lot of fun because it was a step back into the days of brewing by hand.  This is obviously how I was first trained, and how i brewed everyday for years.

When I moved to Troegs, I moved into a much more automated world. Automated brewing, or near-automated brewing is definitely great, and that is one of the reasons i wanted to work for a company like Troegs. However, when I was brewing the porter it was very nice to scale things back and control things as a brewer.

Although there is a PC on the system, we were running nearly the entire brew “by hand”. Setting our lauter speeds, pump frequencies, sparge temps, steam jackets etc., by literally opening and closing valves manually…very basic, and very traditional. The return to manual brewing, on a state of the art brewhouse, coupled with a recipe that could not be more appropriate for hershey, pa, made for a really enjoyable day at work and a great brewing session.

Reindeer Stew Braised with Tröegs Mad Elf

Filed under: Cooking with TröegsMathew @ 1:34 pm

For the past 5 years Nick Johnson our Philadelphia sales rep has held a Tröegs tasting event at Teresa’s Next Door in Wayne, PA around this time of year that everybody always looks forward to. It coincides with their kitchen releasing its first batch of everyone’s favorite holiday fare….Reindeer Stew braised with Tröegs Mad Elf.

Chef and owner Andy Dickerson decided to share the recipe with us this year.

Try it out for yourself and let us know what you think. If you have a recipe of your own you would like to share email it to beerrecipe@troegs.com.

2# Reindeer meat cut into cubes (Venison, Antelope or Rudolph is fine too)
1# turnips peeled and diced
1# parsnip peeled and diced
1# peeled pearl onions
4 bottles of Mad Elf
Bay leaf
Fresh thyme
1C. dried cherries
2T. Honey

Butter, Salt, Pepper, flour, as needed

Season the reindeer cubes with salt and pepper, toss lightly in flour.

Heat a large dutch oven on the stove or big stew pot.
Melt butter to brown the meat in small batches and set aside.
Add turnips, parsnips and pearl onions.  Cook five minutes using the vegetables to get the brown bits off the pan.
Use one bottle of Mad Elf to fully deglaze pan.
Return meat to pan and stir to incorporate.
Add a bay leaf and a sprig of thyme.
Add remaining beers to cover the stew just barely.
Bring up to simmer, cover and cook very gently for 1-1.5 hours until meat is tender.
Remove from heat, remove bay leaf and thyme.
Stir in dry cherries and honey and place in refrigerator until next day.

To reheat warm gently on the stove serve with your favorite mashed potatoes.
Don’t forget to garnish with a cherry for Rudolph’s nose!
